Veggie Stir Fry Recipe
Ingredients:
- 2 cups of brown rice
- ½ cup chopped mushrooms
- 1 cup shredded cabbage
- ½ cup green onion or red onion
- 1 cup carrots, sliced or shredded
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 tbsp minced ginger
- 3 tbsp vegetable oil (or sesame oil)
- Soy sauce or Liquid amino to taste
- Cooked rice, for serving
Directions:
- Heat oil in a large skillet or wok over medium-high heat.
- Add ginger and garlic; sauté until fragrant.
- Toss in mushrooms, onions, carrots, cabbage, and bell pepper. Stir fry 5–7 minutes until veggies are crisp-tender.
- Add water and cover for 1 minute.
- Stir in rice and soy sauce or liquid amino
- Add cooked protein
- Enjoy!
