Directions
- In a saucepot combine your quinoa, dried ramps, and vegetable stock. Bring it to a boil
- Once boiling, reduce to a simmer and cook for 20 minutes or until quinoa is completely cooked through
- While your quinoa is cooking, put a saute pan on medium high heat
- Add about 2 teaspoons of high temperature neutral oil and add your onions and bell peppers, cook for a few minutes until the onions and peppers have softened and have a little bit of color on them
- Add in your corn and season with salt and pepper. Set to the side
- Break your broccoli down into smaller pieces and microwave for 2 minutes
- Remove from the microwave and toss in a bowl with olive oil, salt, and pepper
- Lay broccoli on a sheet tray lined with parchment paper or aluminum foil and roast at 500 F for 5 minutes
- remove your broccoli from the oven and turn the oven down to 275 or to the “warm setting” if you have one
- in a frying pan that’s on medium heat, pour in your black beans, do not drain the juice
- Season your beans with salt, pepper, and whatever other spices you prefer
- Cook until the bean liquid is all gone, and the beans are starting to breakdown
- Remove beans from heat and set to the side
- Add your quinoa, broccoli, beans, and corn mixture, in rows, to a 9×13 pan
- Place in the oven to keep warm and then have everyone make their own grain bowl for dinner!
