Peach Compote

Every so often you hold on to a peach or two for a bit longer than you should and now you've got some squishy peaches. DON'T TOSS THAT FRUIT! It's time to make a fruit compote! We used our compote to top a naan flatbread with goat cheese. How will you use yours?

Ingredients

  • 5 or 6 peaches, large dice

  • ½ lemon, juiced

  • ⅓ cup blueberries (optional)

  • a few leaves of basil

  • sugar, to taste

Directions


  1. Add your peaches to a large pot

  2. Add 1" of water to the

  3. Add in half of your basil leaves to the pot - leave the leaves whole

  4. Simmer for 40 minutes or until the peaches have broken down

  5. Remove the basil leaves from the pot and cook until the liquid is almost all gone

  6. Add blueberries to the pot

  7. Add the rest of your basil, minced to the pot

  8. Stir together and remove from the heat

  9. Add sugar to taste
