A Sweet Potato Punch

Do you have a mishmash of leftovers in your refrigerator and don't know what to do with them? Unleash your inner bougie fast casual dining employee and make yourself a bowl.


Bowls are a great way to get a meal chock full of complete nutrition. Simply combine that leftover rice and protein you have in your fridge with fresh ingredients to add flavor, texture, and additional nutrients. And one of my favorite fresh ingredients to include in any bowl is sweet potato. Sweet potatoes are the perfect sweet offset to the savory flavor of the protein. Plus, they are a great source of fiber and vitamin A.


This is how I prepare my sweet potatoes to join the party bowl.


Step 1: Prepare your sweet potatoes

Ingredients

  • 2 medium sweet potatoes

  • 2 cloves garlic, diced

  • 1/4 cup chopped onion

  • 2 tbsps butter, melted

  • 2 tbsps olive oil

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1 tsp paprika

  • Salt and pepper to taste

Recipe

  1. Preheat oven to 425°F

  2. Cut up your sweet potatoes into 1-2 inch cubes and place in a mixing bowl

  3. Add garlic, onion, butter, olive oil, thyme, rosemary, paprika, salt, and pepper.

  4. Toss the contents of the bowl together until the sweet potatoes are evenly coated with the "marinade."

  5. Spread the sweet potatoes evenly onto a baking sheet or oven safe pan

  6. Bake/roast in the heated oven for 20-25 minutes, or until edges of the sweet potatoes are a golden brown.

  7. Remove from oven and allow to cool for 5 minutes


Step 2: Build Your Bowl

Ingredients

  • 1 cup brown rice, cooked

  • 4 cups of baby spinach

  • 1 cup of black beans or lentils, cooked

  • 1 lb of grilled, baked, or roasted chicken

  • 1 large avocado, chopped

Recipe

  1. Use a salad or rice bowl to give yourself enough space for all of your ingredients.

  2. Layer 1 cup of spinach in your bowl

  3. Add 1 scoop of brown rice

  4. Add 1 scoop of lentil or beans

  5. Add 3-4oz of chicken

  6. Add 1/2 cup of roasted sweet potatoes

  7. Add as much of the avocado as you like

  8. Top your bowl with your favorite dressing. I recommend a pesto vinaigrette.

  9. Cover bowl and shake vigorously so the contents are well combined.

  10. Add salt and pepper to taste, then enjoy!!
