Red Lentil and Kale Soup Recipe
Ingredients:
- 2 tbsp vegetable oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1/2 cup dried red lentils, rinsed
- 1 cup of chopped kale, stems removed OR 1 cup of spinach**
- 3 cups water or vegetable broth
- 1 ½ tsp turmeric
- ½ tsp cumin
- ½ garlic powder
- 1 bay leaf
- Salt & pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
- Stir in garlic powder, cumin, and turmeric. Cook 1 minute more.
- Add lentils, kale**, water or broth, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes, until lentils are tender.
- ** If using spinach, add after the soup is cooked
- Season with salt and pepper. Remove bay leaf before serving.
- Serve hot with a slice of crusty bread and enjoy the ultimate comfort food.
