Get Into Green-uary With Saag

January? Never heard of her. It’s all about Green-uary at Forty Acres Fresh Market. Our saag recipe can be eaten on its own or you can use it as a base and add paneer, chicken, or chickpeas.

Ingredients

  • 1 bunch of mustard greens, stems removed, washed and cut
  • 2 ounces of washed spinach
  • 1 red onion, small dice
  • 2 tablespoons (at least) minced garlic
  • several curry leaves
  • 1″ fresh ginger, peeled and diced
  • 2 small green chilis
  • red chili powder
  • cumin seed
  • turmeric
  • asafoetida powder – this is also known as hing
  • garam masala
  • coriander powder
  • 2 cup water or vegetable broth
  • ghee
  • olive oil
  • salt

Directions

Disclaimer: You’ll notice that we don’t give a lot of measurements in the spice mix. We firmly believe that your ancestors will tell you when too much is too much. Taste as you cook and adjust the seasoning to your preference.

How To Cook The Greens

  1. Heat a large (4-5 quart pot) over medium heat
  2. Add olive oil
  3. Add your ginger, garlic, curry leaves and green chilis
  4. Stir until fragrant
  5. Add in your mustard greens and then your spinach and cook until wilted
  6. Add turmeric, red chili powder, garam masala, and salt
  7. Stir together greens and spices together and then add enough water or vegetable stock to cover the greens by 1″
  8. Cover and cook for 10 minutes or until the liquid has reduced by 25%
  9. Transfer your greens and liquid to a blender and process until smooth
  10. Return the mixture to your pot, cover, and simmer while you make your tadka

How To Make The Tadka

  1. Heat some ghee in a medium size skillet
  2. Add in chopped red onion and cook until it starts to brown
  3. Add ginger and garlic and cook for a moment before adding your chili pepper
  4. Stir your aromatics together and then add your dried spices, stirring to combine after each addition
  5. Let the mixture cook until the spices and aromatics are coated.

Put It All Together

  1. Add your tadka to the pot of greens and stir well to combine
  2. Let it cook on the stovetop for two minutes to make sure the flavors are all combined
  3. Top the rice of your choice with the saag and dig in!
